Sushi originates in the Baiyue cuisine in ancient southern China. They stored fish in fermented rice for months at a time, the fermentation of the rice preventing the fish from spoiling. The rice would be discarded before consumption of the fish.
Traditional Japanese sushis are prepared with vinegared rice, called shari. Styles of sushi vary widely, but its presentation remains of great importance, as it should be a pleasure for the eyes as well as for the mouth.
